Ingredients
100- 50 g millet (cooked)
150 g spinach leaves
6-7 strawberries peanuts
some feta
For the dressing:
1 shallot
some fresh ginger
4 tablespoons roasted peanut oil vomFASS
3 tbsp strawberry balsamic vinegar vomFASS
1 tsp Dijon mustard fromFASS
salt and pepper
3-4 fresh mint leaves
Preparation
Wash the millet thoroughly with hot water. Then put it in a pot and add twice the amount of water. Add salt and bring to a boil. Lower the heat and let the millet swell for about 15-20 minutes. Let it cool down.
In the meantime, the spinach leaves and strawberries can be washed. Chop the peanuts and cut the feta into cubes. Finely grate the ginger. Cut mint leaves into fine strips.
For the dressing, whisk together the peanut oil, strawberry balsamic vinegar, Dijon mustard, ginger, mint, salt and pepper to make a vinaigrette.
Place the millet, spinach and strawberries on a plate. Sprinkle the peanuts and feta on top. Pour the dressing over the top.
